Sailor & Siren is built around one simple idea: do the lobster roll right. Every roll is made with fresh Maine lobster — sourced directly from our family business — packed with the meat from a full 1.25 lb lobster. No shortcuts. No distractions. We hope you love it. Not just like it.

How It Started

Born in Brooklyn.
Inspired by Maine.

After more than a decade of searching for a lobster roll in New York City that actually lived up to the ones found along the coast of Maine, our founder stopped looking — and started building.

What began as a lifelong love of seafood, travel, and community became Sailor & Siren: a Brooklyn-based seafood brand dedicated to doing a few things exceptionally well — starting with the lobster roll.

The Maine Moment

The turning point came on a dock in midcoast Maine. Fresh lobster pulled straight from the water. Simple preparation. No shortcuts. No distractions. Just respect for the ingredient. That moment made one thing clear: the problem wasn't that great lobster rolls didn't exist — it was that they weren't being done properly in NYC. Sailor & Siren exists to close that gap.

Sailor & Siren launched in Brooklyn as a pop-up in the summer of 2025. We believe in meeting people where they are — neighborhood bars, community events, street corners buzzing in the summer. Our pop-ups weren't just about food; they're about gathering, slowing down, and bringing a little coastal magic to the city.

You'll often find us collaborating with other local (often women-owned!) small businesses, highlighting our neighbors, and building a place where great food brings people together.

The Founder

Sailor & Siren was founded by Natalie Borowski, a Greenpoint local, daughter of immigrants, lifelong seafood lover, and passionate community-builder. She is Sailor & Siren's chef, menu tinkerer, and biggest critic, and the one making constant trips to her favorite hardware store next door.

And she could not have built this alone. The biggest thank you to family, friends, and the Greenpoint community!

🌊 We source everything fresh and in limited quantities. Menu items are available while supplies last and may sell out throughout the day — especially lobster, uni, and caviar. Come early!

🌿 Fresh from the Sea. Less for the Landfill.

To help reduce unnecessary waste, we don't provide takeout packaging. Our food tastes best eaten right away — please enjoy your meal at our location. If you'd like to bring something home, just bring your own container and we'll happily pack it for you.

Availability

Do you ever sell out?

Yes — and it can happen earlier than you'd expect. We source everything fresh and in limited quantities: lobster directly from our family in Maine, uni, caviar, and all our other ingredients. We open at 12pm and stay open until we sell out, which can be before 8pm depending on the day. We always post updates on Instagram when we're running low or have sold out for the day.

What's most likely to sell out first?

Lobster is our main event and the first thing to go. We also get our uni (sea urchin), caviar, and locally-made hot dogs in set quantities, so on busy weekends, those items can sell out. If you're coming for something specific, we recommend arriving earlier in the day.

Can I reserve or pre-order?

Not currently — everything is first-come, first-served. We're a small operation and we want everyone to have a fair shot. Follow us on Instagram for real-time updates on what's available.

Why can't you just make more?

We source our lobster directly from our family's operation in Maine, and our other premium ingredients — uni, caviar — come from trusted suppliers in very limited quantities. We will always choose quality over quantity.

Takeout & Packaging

Do you offer takeout?

We don't provide takeout packaging. Our food — especially the lobster rolls — tastes best eaten right away, and we believe in reducing unnecessary waste wherever we can. We encourage you to enjoy your meal with us at our location in Greenpoint.

What if I want to bring food home?

Bring your own container and we'll happily pack it for you. 🌿

When are you open?

Friday, Saturday, and Sunday starting at 12pm. We stay open until we sell out, which is typically around 8pm — but can be earlier. Check our Instagram for same-day updates.

The Lobster

Where does your lobster come from?

Directly from our family's lobster business in Maine. It's the freshest lobster, and it's the reason we do this.

Why does the price change?

Lobster is a wild-caught seafood and its market price fluctuates based on the season, supply, and demand. We price our rolls based on what we pay that week. Ask us in person or reach out via Instagram or text for current pricing.

Is there a full lobster in every roll?

Yes. Every single roll contains the meat from one full lobster. No fillers, no shortcuts.
